mom always said it was what girls were made of. and now it comes to you in the tastiest of packages at hello cupcake, opening monday.

penny karas took one part childhood, added a tablespoon of her marketing and PR expertise, and created dupont circle's newest sweet stop. sure there is plenty of sugar and sprinkles here, but all of the cakes are made from organic, all-natural and locally sourced ingreds. (then again, what isn't nowadays?) don't miss flavors like the "velvet elvis," a peanut butter-‘n-banana combo that would have made the king proud. want something more exotic? try the maya chocolate (cinnamon chocolate cake and chili-spiked ganache frosting), perfect for satisfying those crimson wave cravings. allergy prone types will love her gluten-free and vegan originals. the eco-friendly ingreds translate to the packaging (biodegradable twine), and the space as well: the building is LEED-certified. but karas isn't a tie dye wearing hippie chick: the interior boasts girly touches like a hot pink chandelier and "sprinkle"-decorated walls, designed by her architect hubby, bill bonstra of bonstra haresign architects. and check the scheds for decorating classes and the launch of "bespoke," karas' made-to-order treats.

another thing mom said? eat it in one bite and the calories don't count.
