alain ducasse's newest resto opens this month at the st. regis hotel. adour is not a wine bar, but it's def wine-focused and will feature an interactive wine bar, temp-controlled vaults and private lockers. ducasse named the spot after the river in southwest france near where he was born, and adour stays true to the region. be on the lookout for another ducasse opening this year, bistro benoit. 2

the duo behind butter opens 1 oak, one of the most anticipated lounge openings of '08. sure it's just another nightclub, but the group hopes the black and white wood floor, ostrich leather sofas and gold faucets in the bathrooms will give this spot an over-the-top luxe feel. expect eats from famed iron chef judge alex guarnaschelli. 453

sally hershberger brings her downtown cuts to new uptown digs. slated to open later this year, the woman responsible for meg ryan's shag will share the salon with colorist sharon dorram. talk about a power couple with some powerful prices, like $800 a pop. but now you can take the goods home too. hershberger's hair care line, supreme head, will be avail in stores in early '08. 17
