pork king (and chef darling) david chang is still riding the self-induced wave of momofuku and ssam bar. ko has been the talk of the town ever since chang vacated the old noodle bar location to bring in the tasting-menu only resto. the teeny, tiny spot (seats 14) plans to offer diners a multi-course chef's menu that showcases, not only the ko chefs' techniques, but their personality as they personally serve you. the lucky lot can expect fluke floating in buttermilk, foie gras over litchi, kimchee consomée and sous vide-style egg with osetra caviar. but not for long. the bites change regularly depending on what's avail per season, and what chang feels like doing. wanna make a reservation, don't you? well, get online. ko doesn't have a phone, so the only way in is through their internet ressie system.
