its name may evoke images of the english seaside. but the
bristol is all about pleasing locals with artisan grub and bevs, minus a wallet meltdown. a beautiful day in the neighborhood, indeed.
exec chef chris pandel has worked at fancy-pants restos like NYC's café boulud and chicago's own tru. at this bucktown spot (formerly il covo) he's put the emphasis on rustic, made-from-scratch eats. translation: he's not afraid to get his hands dirty. he'll be butchering whole animals in house and pickling up a storm. look for plenty of fifth quarter treats (roasted marrow bones, pig ear salad) on the ever-changing chalkboard. and soothe your soul with comfy food like duck fat fries and stuffed chicken wings. the howdy neighbor vibe is translated in the space, too, with long communal farm tables and cozy brown leather banquettes. grab a spot at the bar for classic cocktails (you'll love the fresh fruit pisco sour and moscow mule) or opt for organic vino. either way, be sure to share your pull-apart monkey bread and warm pork-stuffed olives. it's the neighborly thing to do.
get on your pony and warn them all: the bristol is coming.
